RESUME

Au Togo, la valorisation des espèces de plantes alimentaires indigènes reste encore insuffisante. Le prunier noir, appelé Vitex doniana, fait partie des plantes sauvages moins valorisées. Le fruit du Vitex doniana aux vertus thérapeutiques diverses, est une source considérable d’antioxydants. Cette étude a eu pour but d’évaluer la composition biochimique du fruit de Vitex doniana, de fabriquer du vin à partir de ce fruit, d’en déterminer les paramètres physicochimiques et réaliser une évaluation sensorielle de ce vin. Il est attendu que cette valorisation permettra aux consommateurs de bénéficier du potentiel nutritionnel du fruit à travers un produit plus acceptable et plus conservatif.

L’étude de la composition biochimique de la pulpe a été effectuée, suivie de deux types de fermentations : une fermentation à partir du moût non enrichi (E0) et une autre à partir du moût enrichi en sucre (E1). Le degré Brix et le pH ont été déterminés au cours des 5 jours de fermentation. Le taux d’alcool, l’acidité totale, l’acidité volatile, l’acidité fixe et l’atténuation limite ont été déterminés sur les deux types de vin obtenus. L’analyse microbiologique et l’évaluation sensorielle ont également été effectuées sur les deux types de vin.

Le taux d’humidité de la pulpe était 75,73 ± 0,50%. L’analyse biochimique de la pulpe a indiqué 0,91 ± 0, 05% de protides, 3,59 ± 0,13% de cendres totaux avec 0,10 ± 0,01% de lipides totaux, 19,67 ± 0,23% de glucides totaux et 0,39 ± 0,5% de vitamine C. La fermentation E0 a permis de produire un vin de teneur en alcool de 4,00%, un pH de 4,01, une acidité fixe, volatile et totale respectivement de 1,47 g/L, 0,81 g/L et 2,28 g/L. La fermentation E1 a permis de produire un vin de 4,50% de teneur en alcool, un pH de 3,80, une acidité fixe, volatile, et totale respectivement de 3,60 g/L, 0,72 g/L et 4,32 g/L. L’évaluation sensorielle a révélé une acceptabilité globale de 3,92 ± 0,81 / 9 pour l’échantillon E0 et 6,00 ± 1,08 / 9 pour l’échantillon E1.

Le fruit de Vitex doniana est très riche en éléments nutritifs. Le vin obtenu à partir de la pulpe de ce fruit a une qualité hygiénique satisfaisante, une bonne couleur et un goût agréable. Le vin obtenu à partir du moût enrichi s’est révélé le plus préféré par les panélistes.

ABSTRACT

In Togo, the valorization of native food plant species is still insufficient. The black plum, called Vitex doniana, is one of these less valued wild plants. The fruit of Vitex doniana with various therapeutic virtues is a considerable source of antioxidants. The goal of this study was to evaluate the biochemical composition of the fruit of Vitex doniana, to make wine from this fruit, to determine its physicochemical parameters and to carry out a sensory evaluation of it. It is expected that this valorization will allow consumers to benefit from the nutritional potential of the fruit through a more acceptable and more conservative product.

The study of the biochemical composition of the pulp was carried out followed by two types of fermentations: the first fermentation (E0) was made with unenriched must and the second (E1) with must enriched with sugar. The degree Brix and the pH were taken during the 5 days of fermentation. The alcohol content, the total acidity, the volatile acidity, the fixed acidity and the limit attenuation were determined on the two types of wine obtained. Microbiological analysis and sensory evaluation were also performed on both types of wine.

The moisture content of the pulp indicated 75.73 ± 0.50%. The biochemical analysis of the pulp indicated 0.91 ± 0.05% protein, 3.59 ± 0.13% total ash with 0.10 ± 0.01% total lipids, 19.67 ± 0.23% of total carbohydrates and 0.39 ± 0.50% of vitamin C. The fermentation E0 allowed to produce a wine with an alcohol content of 4.00%, a pH of 4.01, a fixed, volatile acidity and total of 1.47 g/L, 0.81 g/L and 2.28 g/L, respectively. The E1 experiment produced a wine with 4.5% alcohol content, a pH of 3.80, a fixed, volatile and total acidity respectively of 3.60 g/L, 0.72 g/L and 4.32 g/L. The sensory evaluation revealed an overall acceptability of 3.92 ± 0.81 / 9 for the E0 experiment and 6.0 ± 1.08 / 9 for the E1 test.

The fruit of Vitex doniana is very rich in nutrients. The wine obtained from the pulp of this fruit has a satisfactory hygienic quality, a good color and a pleasant taste. The wine obtained from the enriched must was the most preferred by the panelists.
